Takai by Kashiba is a fine-dining Japanese sushi restaurant created by Shiro Kashiba, the Seattle sushi master credited with bringing Edomae-style sushi to the Pacific Northwest. Opened on the ground floor of the One88 condominium tower between Bellevue Square and Old Bellevue, it was a roughly three-year project and marks Kashiba's first venture on the Eastside.
The kitchen and sushi bar are run by chef Jun Takai, a former apprentice of Kashiba, and specialize almost exclusively in nigiri prepared in the traditional Edomae manner. The omakase progression runs about a dozen courses of seasonal fish alongside bites such as tempura and chawanmushi savory egg custard.
The restaurant offers a sleek, intimate counter experience with sake, wine, and tea pairing options, positioning it among the most ambitious sushi destinations in downtown Bellevue.
