Din Tai Fung
World-famous Taiwanese soup-dumpling house at Lincoln Square, beloved for its xiao long bao.
Din Tai Fung is the globally renowned Taiwanese restaurant chain famous for xiao long bao, the soup dumplings that made the brand popular beginning in the 1970s. Its Lincoln Square location in The Bellevue Collection first opened in 2010 and was among the chain's earliest US restaurants.
Each dumpling is hand-crafted through an 18-fold process to achieve a delicate skin around a rich, savory filling. The menu also includes noodle dishes, stir-fries, buns and greens, with an open kitchen where diners can watch the dumpling-makers at work.
The Bellevue restaurant reopened in a newly designed, expanded space in April 2024, cementing its status as one of the busiest and most popular restaurants in downtown Bellevue.
